In order to get off of unity I am wondering how do I speedrun Doom on PC, mainly what Doom program

You need to start using PRBoom+, learn about demo recording and compatiblity levels. It's the speedrunner's port, thanks to its flexiblity and performance.

Or any other demo compatible port.

 

PrBoom has the most complevels and is easy to use, but depending on your needs, Eternity, Crispy and Chocolate will serve you just as well.
