Egg Discussion #1: Scrambled eggs

I love them basic, just a bit of butter and cooked slowly, served with black pepper and a bit of mushroom ketchup stirred in with hot sauce on top. Been told many times that sloppy or creamy is the posh and proper way, but I hate that milky taste and runny texture. I'm not saying I like them scobiform (although I couldn't cook them any better than that for years), but just... not snotty.

 

Another alternative that I picked up from somewhere and adapted is to cook two-thirds of the way before adding 2:1:1 ground coriander/cumin/turmeric, finishing to serve with fresh lime juice and coriander.

 

 

While we're talking scrambies, plus smoked salmon -- yay or nay? Nay here. I love smoked salmon and scrambled eggs so much, but the enjoyment from each together isn't quite adding up like 1+1.

Hey ya'all are missing the most important detail!

 

What eggs are you using?!

 

Better not be the ultra white, ultra thin-shelled nutrient deficient corporate factory farm crap from the most abused unhealthy chickens.   And if you try hardboiling them, it's a pain in the fingers peeling the ultra thin shell off the egg.

 

Organic may or may not be bullshit in any given case, but try to get cage free or free range.   Unfortunately due to corporate skanks in the US, there's loopholes like momentarily setting a chicken down on the ground qualifies it as free range.

 

Eggs should look like this!

Oooof, delicious. Here in Yucatán are quite popular too. Once I went to a "tiny" town and ordered some eggs. I think it was Ticul. The point is I got home happy and satisfied.

I can't disagree, I don't think I have ever seen natural white eggs... In fact, some of my friends have chickens at their backyards, and they all sent pictures of their chickens' eggs. They're all brown

The way I make scrambled eggs: 3 eggs, a little bit of milk, some diced bacon, onion, garlic and some sundried tomatoes in the pan. Sprinkle some herbs (I just use an italian herbs pack because I'm lazy) and some shredded cheese on top when it's nearly done.

My recipe's pretty simple.  Two eggs per person, salt, pepper, cook in pan on medium-low to low.  Creamiest eggs you'll ever have.  I might add butter depending on the pan, but I usually have no need to add dairy, and I try to avoid it because it cooks at a significantly (enough) different temperature to make it really easy to fuck up the eggs with minimal pay-off.

Yeah, it happens to me a lot. For example, I'm pretty bad when making scrambled eggs, but I don't throw 'em away. I mix them with my dog's food, and she eats them.

Two or three eggs, a dash of cream, and a decent helping of fresh ground black pepper, then fry in butter, perhaps fry a nice sausage to go with it, and then having it with a cup of hot chocolate.

I like a powerful breakfast.

Add 2-3 eggs to a saucepan on the stove on a medium heat, add a dash of milk and whisk. If I’m feeling gourmet (Note this is bogan gourmet pronounced “gore-met”), I might add some tomato (fresh or sun dried) and some salami at the beginning so the flavours diffuse into the eggs. Regardless of if it’s the standard or fancy pants version, when it has about 45-30 seconds left add the finest shredded kraft singles you can find to taste.

 

Serve on 2 slices of buttered toast, add salt and peeper and let stand for approx 1 minute before eating.

Just to add to this topic...

 

A surprisingly tasty and filling anytime meal:

 

1) Bagels/English Muffins/Croissants/King's Hawaiian rolls, your choice

2) Fry up some bacon (or streaky bacon for our Commonwealth English speakers)

3) Scramble the eggs

4) Serve eggs onto bagel/muffin/croissant, put some cheese on top of the eggs and let the eggs melt them, put the bacon on top of the eggs, complete the sandwich with the top half of the bagel/muffin/croissant/Hawaiian roll

5) Enjoy the hell out of them

Yeah. I don't live in NYC though. (But I do live in New York.)

 

Still tasty as hell and everyone should try it at least once. I swear by the bagel version, but if I find big croissants, I nab those. The Hawaiian rolls add a little sweetness to go with the savory bacon, too.
