Gotta be Tricks and Traps (map08). I know it doesn't hold up as well on replay but discovering the clever silliness of that level on first playthrough is why I fell in love with Doom. You really can't go wrong with any part of the corrupted starbase though (maps 07 through 11).

Map 31, I love wolfenstein, I am remastering it in boom right now, and testing it with a new source port, along with restarting it altogether because Prboom+ was very ugly with me

Innmost Dens. It's got a neat design going on with the moated building, and it has my favorite use of the archevile in Doom 2 with the hitscanner courtyard.
