Difference between Doom and ZDoom UDMF

I'm new to doom mapping, and I'm still getting used to all of the programs. But I was wondering, when I start a new map, should I set the game configuration to Doom or ZDoom UDMF? Also, what are the differences? I am using Doom Builder X by the way.

First, you should change to Ultimate DOOM Builder, since it's the most updated.

Now, for the configuration.

DOOM Format: It's the original as it was back in the 90s, very limited but you can change it to BOOM wich haves less restrictions.

ZDOOM (UDMF): This is a way too superior format, less restrictions and you can make 3D Floors, Slopes, Etc...

If you change to either GZDoom Builder or Ultimate DOOM Builder you can have the GZDoom (UDMF) Format wich it's just way better

Doom 2 (Doom in Doom Format) is the format used in the original Doom 2.

UDMF, however, is a format that lesser restrictions 3D Floors, Slopes, Floors that you can move, and rotate. I personally use Doom in Hexen Format, which has Hexen features, i.e Polyobjects (Those are in UDMF too), and a couple other things.

UDB is a great tool to create UDMF maps but there's nothing wrong if OP decides to use DBX instead.
