How are Quake models made?

I've recently been entertaining the thought of giving low poly Quake-style modeling a try and I was wondering how it's achieved? Could you simply use something like Blender or is there something more specific that needs to be used?

For the base model you can use blender (tutorial link, albeit a bit wordy and doesn't explain the hotkeys being used generally from what I scanned through it https://www.youtube.com/watch?v=Ljl_QFs9xhE )
