Enemies and such I can't help you with. For wall and floor textures this video by Doomkid is very helpful.

Im completly and utterly new to everything. I want to make a doom wad with custom item and enemy textures but have no idea how. can anyone help me?

Depends. Are you trying to make a vanilla-compatible WAD, or something more tuned for, say, GZDoom?

The former will require you to do stuff like converting your texture to the Doom palette, creating a texture patch, adding it to PNAMES, etc.

The latter is a lot more straightforward (basically just add your texture as a PNG to the WAD) and reference it straight.

To be fair, this video is for how to add textures in a vanilla-compatible way. (Hence why it's going through the trouble of converting it to the Doom palette and adding entries to PNAMES, etc.)

If you're not aiming for vanilla compatibility, then pretty much all you need to do is add the PNG file to your WAD, use your WAD as a resource in whatever you're using to map with (Ultimate Doom Builder, SLADE, etc.) and then just tell it what texture to throw on a given wall.

Enemies/Items are a different beast entirely. If you're just replacing graphics, you will need to have those properly converted to the Doom sprite palette and sprite format, and name them specific names, but they will keep the same behavior as the old ones.

If you're talking about creating new enemies or such, that's a much more advanced topic, requiring the use of DeHackEd (or its windows equivalents, i.e; WhackEd) for the vanilla game, or something like DECORATE/ZScript coding for GZDoom.

Aesthetically, I just fart around with stuff from old texture CDs from eBay and distort it in paint.net. Works pretty well usually, actually.
