There is a way to get UDB running on Linux natively, but it involves building it from source, and doing it that way is less stable than running it on WINE or Windows as far as I've heard. Build instructions are here in case you're willing to give it a try.

Personally, on UNIX-like systems, I find Eureka to be the most stable.  UDB and Slade's Map Editor on Linux crash 'a lot', far more than I'm comfortable in using.  Eureka is at least native and a hell of a lot more stable.

 

The best way for UDB is to get it working using the open source C# implementation Mono.  But I think the viewer depends on some Win Forms that exist only on Windows' C#..  which is a shame.

The biggest issue with UDB on linux is the node builder, I have found that using Eureka for it's node builder is a solution.  I have no clue if UDMF would be any different as the way maps are built in that format are different from my understanding.

I gave these a shot and it was pretty quick and easy to build. I made a quick test level (couple rooms with a hell knight) and it crashed once, and gave a nodebuilder error the first time I tried to save it. The 3D view worked fine too.
