If I'm not mistaken, the latter menu is UDMF.

Could be a version difference or you have set the map compatibility option to something other than UDMF (looks like Boom or Vanilla to me).

The format you're using is most certainly the normal GZDoom format, since it has that "not coop/dm" flag and stealth monsters.

The format the video shows is UDMF (from the screenshot the video is probably GamingGargoyle's UDB Guide, which shows that the format is UDMF at 0:40).
