eh maybe we should take a break and pick up on this another time

I'm going to be perfectly honest - I think you should call it quits at the end of the month, like you said. The project has been up since January, right? That's over half a year worth of time for everyone to join the project and submit their maps. If it's taken this long and this project only has ~20 maps, it's not going to get more even if you wait another half year.

I'd suggest the following:

1) Message or ping everybody who's joined the project but hasn't submitted anything. Maybe they forgot, maybe they're almost done, but you need to check in with them directly.
2) Make it clear that the project ends soon, but is still ongoing. The page still says it ended last month, which is a tad confusing. Maybe people want to join, but saw the project is over already, so they didn't.
3) Message people that already submitted a map if they'd like to make another one. I mean, they already showed interest in the project, so maybe they'd be interested in contributing to it further. I also made two maps, just because I'm a really big fan of the idea of this contest. In fact, I'd even make another map, a much smaller one this time, but at least about a track that doesn't have a map yet (WAITING FOR ROMERO TO PLAY, taken by Bochnik Chleba, but they haven't submitted anything). So let me know if you'd like that.
4) Make a few maps yourself. You've only made one so far, but I'm sure you could think of something else. You could also do something for "ENDGAME", maybe just a small map at the end of the wad that thanks the player for playing and everyone else for helping out the project.

I think those are the best options. You did what you could, and with 20/30 maps, I think this project was a success. Was this your first time hosting such a community project? If yes, then that was a very good start.
And I mean, it was a very specific concept, since people really had to think about a gimmick that fit each track. It's not like that box WAD where people just have to make levels that fit into a small cube. So the fact more than 2/3 of maps got made is pretty impressive.
There's no shame in finishing it up now, even if it's not 100% complete. Heck, maybe people will play the WAD, get inspired, and make a map of their own that you can then add later!

But yeah, I think it's time to wrap things up.

Nothing is going to waste, there's just a few maps that didn't get made. It's still a very good project.

You'd just need to give me feedback if you'd like me to make a third map (one that's still missing) or not. It won't be as big as the others, but it's better than nothing.

Sorry for not replying sooner, but I am still on board. I am busy with school and part time job, but nevertheless I will try to finish my map till end of the month.

I could take in the dark 2 if maps need to be done and the project is still going?

So, October is over, are you going to end this project?
I think giving the two people that said they were finishing up their map a week or so to do that would be a good idea, as well as sending everybody else a PM that they have one more week or their map won't be included. They can always add them later, but I don't think much is going to come out of it. You really need to check in with them personally, though. A random message in a forum post won't cut it, I don't think.

You can let this project keep going until the end of the year, but I feel like not much is going to happen until then. Time isn't a problem, lack of commitment is (not blaming or pointing fingers, this is a voluntary project after all). People had enough time, they just didn't care enough about the project (again, not pointing fingers, nobody HAS to make anything for this if they don't feel like it). That's all fine and okay, but you should be able to end it when it's not going anywhere anymore.

I think if you do a new project, do a strict deadline of a few months (3-4 maybe), and then enforce that. I think this project dragged on for a little too long because people saw they could hand in their work 5 months from now, so they took their time. Or you can do an even shorter deadline but with much smaller maps. The Box Doom project had the right idea, it doesn't take long at all to make a map that fits into a single cube.
But good luck, and I'm looking forward to playing everyone's submissions!

I made a new Commute Project

It combines doom 1 and 2 maps together into something fresh and new yet familar

That's hilarious, I was just thinking about that the other day. I might even join if I find the time.

I really hope this can be revived and completed. Very good premise. If it ever comes back I'll try to get a slot for it.

I think at the very least, we should compile all the maps already completed and release it as is.  Community projects shouldn't always shoot for all 32 maps.

I agree with this. 20 maps is competent enough, and it would be sucky to throw away all their efforts.
