What Speed Do Most People Record At?

Hey everyone, 

 I've started recording some gameplay footage for a fun little video series I want to make, and I'm noticing that my footage doesn't look as good as the stuff I see elsewhere on YouTube and other sites.

 Namely, I feel like my camera moves around way too fast and is super jerky. 

 Is this just a mouse sensitivity thing? Or are there some settings to smooth out mouse look that other people use when recording? I think I've noticed some people choose to record without mouse look - but I'm playing Heretic without Auto-aim so I need the up down mobility.

 I don't want my footage to give people motion sickness - but I also don't think I could beat some of these levels without my jerky ADHD camera movement.

 Any tips?
