Does GZDoom support ragdoll physics?

Not out of the box, no.

There are plans and prototypes for ZScript to be able to manipulate the bones of skeletal models in code. It's not out of the question that someone could try to hack together a rough ragdoll system using that functionality, some copious linetrace abuse, and the patience of a monk... but it'd take a vast amount of blood, sweat and tears to create something that would likely look crap and be very expensive on performance.
