If we're talking about the original 90s games, well considering that many of them were blatantly borrowing from songs that the team enjoyed, it's mainly a lot of metal and thrash, with Doom II going for more of a darker tone in its music; doom and grunge, as others have said.

 

If it's the new games though, very much industrial and djent, with heavy elements of electronic as well in there. It's kinda hard to really pin it down though to one specific genre since it varies.
