Creative rooms with enough space to fight enemies on your terms. Terrain that changes around you. I also like wads that take advantage of tricks and traps that many modern mappers seem to have forgotten. You know those things. Crushers, self-building stairs, donut sectors, floors that lower under you to reveal nukage or lava, self-destructing bridges you have to run across, monster closets that reveal more areas, and other stuff. :P
