What are your favorite Doom levels? These are mine:

Ultimate Doom:

The Hangar - reminds me of my good ol' newbie days! :)
Warrens - A copy of E3M1 with a cool twist
Military Base - Very well designed

Doom II:

Nirvana - very challenging
Level-16 (forgot name) - fun to guide the Revenant fireballs into sacking into monsters

Final Doom - Tnt Evilution

The Crater - reminds me of the vacation over a year ago wehn my family went to the Meteor Crater in Arizona
Wormhole - very interesting
Caribbean - feels like a real vacation (LMAO, I really need a life :P)

Final Doom - Plutonia

Odyssey of Noises, Cyberden, Go 2 It - very challenging.
