you can just extract those from the IWADS themselves using Slade. it even has a MUS2MIDI converter, so you can play it back in a music player. however, from my experience, it always tends to shift the tempo of the tracks up by 20 BPM for whatever reason.

Now where can I find the MAP16 music of Freedoom 10.1 ?

All current Freedoom tracks can be downloaded from the Github source repository. They have a .mus extension but since a recent commit they're all midi files.
